After some years in California, French chef Gilles Epié returned to Paris to open his stunning new Champs-Élysées restaurant Citrus Étoile. With a refined and sophisticated atmosphere, Citrus Étoile has already become one of the major players in Paris with a loyal clientele for both lunch & dinner. Epié has the unique talent of simplifying the elaborate and his innovative menu combines classic French cuisine with Californian twists, using no fat & very little by way of sauces. Begin with asparagus with salmon caviar, lime juice, and crumbled egg yolks; braised scallops with parmesan cheese and olive oil; or perhaps some slices of foie gras with truffles and port wine sauce. Delightful main courses include John Dory, served with its skin on a bed of laurel leaves with grated parmesan cheese; breast of pigeon with foie gras and green cabbage; and lobster cooked in a bouillon of green asparagus and tarragon. Epié does his own bread, and is proud of his wine cellar that you can not miss as you enter the restaurant. The place is always packed at lunch; dinner is more cozy. Highly recommended.
